Gelatine has a wide range of health benefits, and it gets packaged and sold to us in two different ways.
Gelatine powder is gelatine that has been dried and broken up into little grains. This means it disperses more easily throughout a dish (can be stirred in).
Leaf gelatine, or gelatine sheets, is gelatine that has been dried in a flat sheet. It tends to result in a clearer/more transparent final dish. One teaspoon of powdered gelatine is usually equivalent to about four sheets.
Health-wise, there\’s no real difference: the key is to get the purest, best quality gelatine possible. A good rule of thumb is to choose gelatine that clearly states its source; if it doesn\’t, it\’s likely to be by-products from factory farms (and contain all the same hormones as factory farmed meat). Choosing gelatine that clearly lists its source also ensures that those who keep kosher or can\’t eat porcine/bovine products for other religious reasons know exactly what animal their gelatine comes from.
